I found peeled watermelon seeds online and thought they'd be a fun way to add some crunch to a salad or bread.
But a jaunt on the net told me that there's more to these little seeds than meets the molars. They are a crazy big source of protein! According to this article, an oz of peeled and sprouted watermelon seeds have 10 grams of protein! That's as much as almost 2 eggs!!!
I tossed a handful into the salad bowl, along with diced tomatoes and green peppers (in Maharashtra, we grate or dice our vegetables for a salad), and half a handful of peanuts That's precise huh? :-)
I kept the dressing simple (a vinaigrette of sunflower oil, lemon juice, salt and a pinch of sugar), since I wanted the taste of the seeds to come through.
