Tofu and egg bhurji


To serve 3 moderately hungry people or two very hungry ones

Calories per serving: 180*  Protein: 10 g*

90 g firm tofu, crumbled
2 large eggs
1 onion, chopped
3-4 sprigs of coriander, chopped
1-2 tsp water
Salt to taste
Pinch of aamchoor (dried and ground green mango)
1 T oil (or less with a non-stick pan)


Combine everything except the oil and beat slightly.

Pour on a hot pan greased with oil, and cook gently on medium heat until crumbly yet moist.

Notes: I used the bhurji as a filling for a palak roti wrap, with a super spicy chutney to the mix to liven things up. The creaminess of tofu made it easy to spread on the roti and the coriander helped neutralise the beaniness (if there is such a term) of tofu. I like to think that the aamchoor did its bit too.
